Traditional gourmet cuisine

From the great classics of local cuisine to dishes with a southern French twist - reminiscent of the Provence that so inspires the chef - the home-style cooking at L'Auberge is generous and indulgent, often inventive, and always evolving with the seasons and market-fresh produce.

Here, the menu changes every four weeks, as each dish is made using fresh produce, carefully selected from trusted suppliers by the chef, who has been fittingly rewarded with a Michelin Plate. Local Bresse specialities are combined with Provençal-inspired dishes such as risotto or pistou. Let yourself be guided as you embark on a mouthwatering culinary adventure.

Starters (choice of one):

  • Fresh cream of Breton lobster, vegetable cromesqui and ginger
  • Fresh tuna tartare, cucumber tsatsiki with cheese from Etrez and peppermint served with a garlic-rubbed crostini
  • Macaron of duck foie gras (France) with a marmalade and French shallot pickle
  • Salad of the South: confit vegetables, green salad and marinated fresh goat's cheese
  • Bresse salad: chicken livers flambéed in Cognac and smoked duck breast from the southwest of France

Main courses (choice of one): 

  • Risotto with capers and flat-leaf parsley served with a monkfish medallion wrapped in cured ham
  • Confit lamb shank (United Kingdom), tomato and sweet pepper fondue with pan-fried new potatoes and thyme
  • Bresse chicken (+€5) with cream and morel mushrooms and potato Parmentier pancakes

Cheese or dessert (one of your choice): 

  • Faisselle cheese from Etrez
  • Platter of matured cheeses
  • Dessert

Gaëlle, with her passion for wine, is responsible for the wine list at L’Auberge. Often straying off the beaten track and discovering rare gems, she selects, as far as possible, vintages from small-scale producers whom she and her husband meet and consult with to ensure the best possible pairing with their dishes.

The cellar at this bistro near Bourg-en-Bresse gives pride of place to wines from the neighbouring departments of Mâconnais and Bugey, while not forgetting the wines of Burgundy and the Rhône Valley. She has opted for treasures from regional estate owners for her selection of Bordeaux vintages and has been loyal to the same grower in her choice of Chablis since her arrival in 2000.
