Cauliflower panna cotta with a salpicon curried with spices from Dijon’s Saveurs du Cachemire boutique

Carpaccio of smoked fillet of beef (France) with grated beetroot in roasted rapeseed oil

Starters:

  Cannelloni of Faroese salmon and crab with shellfish mayonnaise and lamb's lettuce salad

or

A macaron of duck foie gras (France) with a chicory jam infused with orange and caramel

Main courses: 

Pan-fried risotto with spinach shoots, duet of Normandy scallops and lightly seared squid in a Madagascan vanilla beurre blanc

or

Bresse chicken with cream and a vin jaune from the Jura, with a baked crushed potatoe and celeriac confit
